Here's a sample dish for you
lime delicious
Butter to grease ramekins
25g butter, softened
½ cup sugar
1 dspn SAL Lime and Vanilla Bean Syrup
finely grated zest of 2 limes
juice of 4 limes
2 eggs separated
150ml milk
3 tbs flour, sifted
Icing sugar to dust
Preheat oven to 160c. Grease 6 x 180ml capacity ramekins with butter.
Place butter, sugar and Lime and Vanilla Bean Syrup in a bowl and beat until pale and creamy. Whisk in lime zest and juice, egg yolks and milk and fold in flour. Whisk egg whites to soft peaks and carefully fold into first mixture.
Spoon into prepared dishes and bake for 15-20 minutes until puffed and golden.
Remove from oven, dust with icing sugar and serve immediately because these soufflé-like puddings will deflate very quickly.

coriander and lime yoghurt dressing
¼ cup natural yoghurt
½ teaspoon Lime & Chilli Plash (or to your taste buds.)
zest and juice of 1 lime
1 small red chilli - chopped (de-seeded)
freshly ground salt and pepper
Mix all ingredients together in medium sized bowl. Cover with plastic wrap and refrigerate until required.

lie curd cake
kaffir lime and lemongrass mussels
2kg mussels, scrubbed
2tbsp olive oil
6 kaffir lime leaves, mid-ribs remove, sliced finely
2 stems lemon grass, trimmed, cut into 5cm lengths and bruised
2 green chillies, halved lengthwise
2 cloves garlic, peeled and sliced finely
juice of 2 limes
1 tsp SAL Lime & Lemongrass Drizzle
1tsp honey
150ml light coconut milk
Heat the oil in a large saucepan, add the kaffir lime leaves lemon grass and chillies and stir-fry over a medium heat for 30 seconds. Add the garlic and cook until fragrant. Add the mussels and stir. Cover and cook until all have opened, shaking the pan once ot twice, removing mussels as they open. Remove from the heat and spoon the mussels into serving bowls; discard any that have not opened. Stir in the lime juice, SAL Drizzle and honey and bring to the boil. Reduce the heat and stir in the coconut milk until heated. Spoon the sauce over the mussels and serve.

- The chutneys and pickles represent ‘sweet,
spicy and hot’ flavours, vital accompaniments to cheese and meats.
- The two toast toppings are designed to balance ‘sweet and tart’ in
a jar, with fig adding the comfort of home preserving. Lime Curd, reminiscent of ‘ Mum’s lemon honey’ only more intensely tangy is totally decadent and so wicked! Saffron Lime Curd is a stunning variation on the original
- Just a Dressing – a sweet garlic vinaigrette, and the Lime and Mustard Seed Dressing, a lime-driven dressing for green salads and, as was admitted, over ‘just about everything!’ The Saffron Lime Dressing introduces the exotic flavour and colour of saffron to lime, just beautiful.
- The cooks’ need
was in mind when we launched the versatile Lime & Lemongrass Drizzle – a syrup to be drizzled over dessert cake, fresh fruit, ice-cream
or in a champagne glass as well as adding to the pan-frying or marinading
of fish.
- Likewise the Lime and Chilli Plash, with its Asian-style ingredients,
is a must over prawns and in any dish that requires the Asian influence.
- The advent of Spicy Glaze is another story! A superb reduction of lime juice, fresh chilli, garlic ...... which accompanies hot fish, spare ribs, chicken, or use as a marinade. One Irish gentleman even drinks it!
- The Lime Cordial,
a tangy concentrate is delicious as a long, cool fresh drink or with
gin or vodka with ice.
- Lime Juice, no preservatives - just as tangy as it should be.
- Margarita Sour Mix is great in the obvious and many other cocktails
- The two dessert toppings have so many uses. Over desserts, mixed into natural yoghurt and mixed in cocktails. Or simply with soda water. Or you could try spicing up your cereal or porridge. We can recommend it as a great way to start the day.
- Fresh Limes are in season from March to October - firstly green then becoming yellow & more juicy.
- Another new product in our range is vacuum-packed Preserved Lemons. Whilst new to the
cooking scene for most, the preserved lemon is a versatile condiment used
in lamb dishes, couscous and salads. Kaffir Lime leaves too - what more can we say about the exquisite fresh taste?
We are proud of our handmade products because we use natural ingredients
with no preservatives, no additives, and no emulsifiers. We think our
